Ally Walsh and Casey Wojtalewicz started roasting in their Los Angeles apartment in 2016 and sold at neighborhood pop-ups before opening a cafe in Echo Park. A second cafe opened in Prospect Heights, Brooklyn, in March 2026. Sagebrush, a Colombian lot from Tolima, carries Regenerative Organic Certification.
As of October 2026, the lineup includes coffees from Brazil, Costa Rica, Ethiopia, Mexico, Peru, and Rwanda, plus freeze-dried instant coffee that Canyon's site says Wirecutter's best instant coffee guide ranked first.
