Wille Yli-Luoma, a Finnish professional snowboarder, took up roasting at home on a small batch roaster, and he and Rebekah Yli-Luoma opened Heart in 2009. In 2016, Thrillist described the East Burnside cafe as built around a black Probat roaster.
As of October 2026, the shop lists coffees from Colombia, Ethiopia, Kenya, and Mexico.
