Olga and Alex Sobal founded Hedge in 2015 as a mobile operation serving coffee roasted by Linea Caffe. When events halted in 2020 they brought roasting in-house, with Alex as head roaster. The cafe and roastery at 434 Shotwell Street opened in late 2025, with a Loring S35 Kestrel roasting behind glass.
The cafe sits in a double-height hall with a skylight, and a glass wall faces a yard with trees and wooden benches. The online store color-codes its bags by process, black for washed, white for natural and red for limited releases.
