Jared Linzmeier, a former Intelligentsia roaster, and co-founder Deanna Linzmeier began roasting in early 2014 from a garage in rural Portage County. In 2015 they moved into a warehouse in Nelsonville, Wisconsin, which houses roasting, shipping, and quality control, and a full cafe followed in Stevens Point in 2019.
Ruby won a Good Food Award in 2016 and the 2015 Sprudgie for best subscription, and Food & Wine named it the best coffee roaster in Wisconsin in 2022. Its online shop in October 2026 lists lots from Ethiopia, Kenya, Costa Rica, Mexico, and Peru.
