Lance Schnorenberg and Tobin Polk, who met washing dishes in Seattle cafes, taught themselves to roast on a Probat in a fourth-floor Bushwick loft. They sold beans as Lofted Coffee before renaming the business SEY in 2017.
As of October 2026 the site lists Colombian and Ethiopian coffees, including Ethiopian landrace selections. Roast profiles are tuned for a clear expression of each coffee's own character.
